When Jannet Dolin moved to Wilmette in the early 2000s, she noticed something was missing on the North Shore.
“We had no taco places or many options for Latin or Mexican food,” said Dolin, who learned to cook when she was a young girl growing up in Mexico. “I wanted to start a business at that time, but I had a young family and I was working in a different industry. I was hoping that somewhere would open so that when I wanted a taco, I wouldn’t have to go to downtown Chicago or the South Side.”
